Fat Free Banana, Date & Walnut Muffin


Made these fat free banana, date & walnut muffin (Fat Free Vegan Kitchen) last night and they are quite tasty but a little chewy. Probably because there's no fat in it. Yes! No oil nor margarine and no sugar too!!! It's made with whole wheat pastry flour, unbleached all purpose flour, agave nectar, applesauce, soy milk, apple cider vinegar, bananas, dates and walnuts. Next time I'll add in some flax seeds to increase the nutritional value.



So if I want some healthy, filling, fat and sugar free snack, I'll definitely make one of these! Hmmm..maybe next time I'll use cranberries or blueberries...

It's amazing how you manage your time! You're working full-time, have a daughter and still have time to bake regularly. Impressive! Food looks yummy!
